The chilli flavour goes from very mild to fiery. In Thailand the little chillies make every curry or rice dish into something really hot. Dried chilli and chilli pasty are also favoured condiments. If you take out the seeds and the skin, the heat becomes milder. Halve the fresh chilli and take the seeds out. In dried chillies, cut the end and agitate it. When you finish, please wash your hands!
